Grilled Pork Belly

This is one of those simple marinades I use when I want something quick and full of flavour. Fish sauce brings the saltiness, honey helps the pork caramelise, and garlic and black pepper do the rest.

I normally give the pork a few hours to marinate, but I’ve also made this with only 20 minutes when I was short on time and it still came out tasty. Pan-fry it until the pork belly is nicely browned and crisp around the edges.

It works well as a side dish, with rice, noodles, pickles, or as part of a larger Vietnamese-style meal.
