In a mixing bowl combine 1.5 tbsp fish sauce, 2 tbsp Orange Blossom Honey, 1.5 tbsp Oyster Sauce, 3 tsp Garlic, 1/2 tsp black pepper, 1 tbsp Lemongrass Paste, 1 medium Red Onion
Add 500 gm Lean Pork Mince, shape in into patties.
I put shaping in prep so you can test if the mixture will hold shape. If you find it hard to shape then you have added too much onion. You can actually shape the Cha and pan fry as you go

Cook Bun according to instructions, drain and dry
In a small pot combine 3 cups Coconut Water, 2 tbsp Orange Blossom Honey, 1/2 cup Fish Sauce, 3 tbsp Lime Juice, 6 tsp Garlic, Chilli
Heat sauce broth to combine the ingredients
Bun Cha in Hanoi is served with the sauce broth warm

Assemble
Put Pickled Carrots and cha in bowl, ladle over the sauce and dip with noodles,
Served on the side with Coriander, Mint, Purple Perilla, Any other leafy Salad
