    Thai Roast Pork Belly Stir Fry

    This is one of my quick meals for when I feel like something Thai but don’t want to spend much time cooking.

    Instead of preparing the pork from scratch, I buy Cantonese roast pork from the local Chinese BBQ shop, then stir-fry it with garlic, chilli and a simple sauce before folding through plenty of Thai basil at the end.

    It’s definitely a mix of Chinese and Thai cooking, but that’s really the point of this recipe. The roast pork is already cooked and full of flavour, so the whole dish comes together quickly. Serve it with Thai jasmine rice and it makes an easy meal with very little prep.

    Thai Roast Pork Belly Stir Fry

    A quick Thai-style stir fry using Cantonese roast pork, garlic, chilli and Thai basil, tossed in a simple savoury sauce and served with fragrant jasmine rice.

    Ingredients

    • 300 g Cantonese Roast Pork You can roast your own pork but for me, it's easier to just buy it as this is a quick recipe
    • 4 tsp Garlic Minced
    • 2 Thai Chillies to taste
    • 1 bunch Thai Basil Pick off the leaves and discrard the stem
    • 1 tbsp Mild Olive Oil
    Sauce
    • 1 tbsp Oyster Sauce
    • 1 tnsp Light Soy
    • 1 tsp Fish Sauce
    • 2 tbsp Water
    Serve with
    • 1 cup Thai Hom Mali Rice

    • 1 Wok

    Method

    Prep
    1. In mixing bowl combine 1 tbsp Oyster Sauce, 1 tnsp Light Soy, 1 tsp Fish Sauce, 2 tbsp Water to make suace
    Cook
    1. Heat Wok
    2. Add 1 tbsp Mild Olive Oil
    3. 300 g Cantonese Roast Pork
    4. Add 4 tsp Garlic and 2 Thai Chillies
    5. Turn off Heat
    6. Fold in 1 bunch Thai Basil
    Serve
    1. Serve with 1 cup Thai Hom Mali Rice
