Lemon Oregano Dressing

I made this dressing to go with my Mediterranean Garlic & Paprika Prawns and wanted something fresh enough to balance the smoky paprika, garlic and olive oil without adding another heavy flavour to the plate.

It’s about as simple as a dressing gets: lemon, extra virgin olive oil, oregano, garlic and black pepper. There’s no added sweetness because I actually want the acidity from the lemon to come through, especially with mixed leaves and thinly sliced red onion.

It’s a good basic Mediterranean-style dressing to keep around whenever a salad needs a little acidity and flavour without becoming the main event.

Lemon Oregano Dressing

Ingredients

  • 1 tbsp fresh lemon juice
  • 1/2 tsp dried oregano
  • 1 tsp minced garlic
  • 1/4 tsp salt
  • 1/2 tsp Cracked black pepper

Equipment

  • 1 Mixing Bowl

Method

  1. Whisk or shake everything together, taste, then toss through the mixed leaves and thinly sliced red onion immediately before serving.
